If the seat base is plastic then it isn't an OE seat and that could easily be the source of your problem with it catching the tank.
There are no pitfalls to fitting twin front brakes except sourcing the parts from a twin brake model from the same sort of era. I believe Z650 stuff swaps straight over (don't forget you will also need the larger capacity master cylinder from a Z650C or similar).
Resprays - well my Z650 is currently at Racepaint in Ilkeston being done in Candy Red - but it'll be a 600 quid bill when I go collect it ....

if its similar to a OE seat there is movement in the hinges, they may have been adjusted wrong. worth a try

Any decent upholsterer should be able to modify your seat to fit better too if you cannot adjust it out. It may need a little trimming off the front.

On your question on painting, yes Racepaint are clued up at painting Candies. That's why I ended up there. they aint cheap - but then good rarely comes cheap.
Had I known of the guy in Oldham mind - I would have enquired there as well
